Origin Journal: Discovering Guji, Ethiopia

Every spring, our head roaster Aiden travels to origin countries to meet the farmers behind our beans. This year, his journey took him to the Guji zone of southern Ethiopia — where some of the world’s most complex and floral coffees are grown.

The Guji highlands sit between 1,800 and 2,200 meters elevation. The cool nights and warm days create ideal conditions for slow cherry maturation, which develops the intense berry and jasmine notes that Guji coffees are famous for. We visited three washing stations and cupped over forty lots before selecting our new seasonal offering.

Direct trade isn’t just a label for us. It means standing on the farms, sharing meals with the producers, and paying prices that reflect the true value of their work. This Guji lot will be available at the bar starting next week as a limited V60-only offering.
